I love having a chicken salad on hand for busy days when I need to grab a quick lunch or dinner! You can easily make adjustments to this recipe, substitute almonds for walnuts or grapes for apple! I use a combination of Greek yogurt and my favorite mayonnaise.
We usually serve chicken salad on a salad... I know it sounds so weird but it's so perfect and I don't have to worry about a dressing. The chicken salad is already flavored so well that I don't have to worry about a salad dressing! I just add some fresh greens like spinach, kale and/or arugula and I'm ready to eat!
This recipe is great on it's own, with crackers or on a sandwich! When we feel like splurging a little we serve it on our favorite ciabatta rolls.

I used to bake it in the oven specifically to make chicken salad until I found this brand of grilled chicken strips that is PERFECT for these kinds of recipes!

Chicken salad with fresh jalapenos, apples and walnuts! It's perfect to have on hand for busy or lazy days!
1 ½ cup cooked, chopped chicken breast
¾ cup greek yogurt
¼ cup mayonnaise (Hellmann’s is my favorite)
1 apple- diced
¼ cup diced red onion
1-2 jalapenos- diced
chives or green onions- chopped (as much or as little as you’d like)
¼ cup chopped pickles (optional)
½ cup chopped walnuts (more or less)
1 tablespoon garlic powder
1 teaspoon salt (add more per taste)
½ teaspoon black pepper
½ teaspoon ground cumin
½-1 teaspoon chipotle powder (optional)
- Chop and measure all ingredients
- Add all ingredients to a large bowl and mix until well combined
- Sometimes I mix yogurt, mayo, garlic powder, salt, black pepper, and cumin until well blended then I add it to the large bowl with other ingredients. Store in the fridge for up to 3 days!
- Serve on greens, your favorite sandwich bread or with crackers. Enjoy!
